Backstrap, also known as eye of loin, is a highly versatile, lean cut that is great for panfrying and barbequing. Serve it whole as a piece of steak or slice the steak up and serve over a crisp green salad.
Native grass-fed Ryeland lamb, humanely raised by Tristia and John Lakey on our Sunbury farm. Backstrap is from the loin section on the lamb. It is the "PRIME" meat on the lamb, it is the equivalent to the eye fillet and porterhouse on a beef animal. It is the lamb steak!
