The lesser-known sister of regular ricotta, ricotta salata is a hard, aged cheese featuring wonderful earthy flavours. It shares similarities with other varieties of hard Italian cheeses like Grana Padano and Parmigiano Reggiano, and it has a sharp, tangy and salty flavour that adds so much value to a range of culinary creations.
